Fresh Ingredients Are Crushed Together
Authentic fused oils are made by crushing fresh olives together with ripe citrus, herbs, peppers, or other fresh produce. The olives and produce reach the mill within hours of harvest and are processed together using cold mechanical extraction.
This artisan method is difficult, costly, and highly dependent on timing. Precise olive-to-produce ratios may take several harvest seasons to perfect, making every successful agrumato a true labor of craftsmanship.
Flavor Is Added After Extraction
Infused oils begin with finished olive oil. Carefully selected flavors are introduced after the olives have already been crushed and the oil extracted. This makes it possible to create delicious combinations using ingredients that may not be suitable or available for co-milling.
“Fused” describes this specific co-crushing process—not simply a stronger infusion. Both methods create flavorful, versatile oils, but each follows a distinctly different path from mill to table.
