Linda's Cilantro Sicilian Lemon Salmon

Salmon Baked in Foil - 4 servings
Salmon
  • 4 wild caught salmon filets - drizzle with a little of the cilantro and roasted onion olive oil, and season with salt and ground black pepper
Sauce
  • 2 tomatoes, chopped
  • 2 shallots, chopped
  • 2 Tbsp of the Cilantro & Roasted Onion olive oil
  • 2 Tbsp of the Sicilian Lemon White Balsamic
  • 1 tsp dried oregano
  • 1 tsp dried thyme
1. Preheat oven to 400 degrees
2. Place each seasoned salmon filet on a sheet of foil
3. Spoon the tomato mixture evenly over each salmon filet
4. Form the foil into packets, covering the fish completely and seal tightly
5. Place the packets on a baking sheet
6. Bake imtil the salmon is just cooked through, about 25 minutes
7. Transfer the foil packets to plates and serve
